Samba Chipotle Potato Salad

This is my first time making potato salad .I know this is usually a summertime staple, but I was in the mood for potato salad.Not just any old potato salad something  I can put a twist to.So I decided to make this with chipotle powder in it because I love spicy foods.I love how it tastes its a bit spicy but with a slight sweetness from the mayonnaise .This potato salad is dressed in  a chipotle aioli sauce with a hint of lime .It sort of has that latin flare that make you wanna samba.So if you wanna samba here is my recipe down below.

Mis En Place:

3 Potatoes

1/2 tbsp olive oil

1/4 tsp kosher

1/2 tsp cracked black pepper

Preparing The Potatoes For Baking:

1.Preheat the oven to 400.

2. Dice potatoes into medium to large pieces.

3.Now put them in a medium sized bowl.

4.Add your olive oil,salt,black pepper and Stir until thoroughly coated.Now turn the potatoes out in a single layer on a foiled,oiled  sheet pan.

Place into the oven for 25-35mins and let sit aside for 30 mins or until cool.

Making The Chipotle  Mayo:

Ingredients:

1/2 cup Mayonaise

1/2 tsp mustard-I used spicy mustard

1 tbsp red onion chopped

1 garlic clove-minced

1/2 tbsp fresno chili pepper -seeded and chopped

1 tsp lime juice

1/2 tsp lime zest

1 tsp chipotle powder

1/2 tsp paprika

1/2 tsp dill dried or fresh

1/2 tsp fresh or dried parsely

1/4 tsp kosher

1/4 tsp black pepper

Putting it all together:

1.In a medium sized bowl add mayonnaise,mustard,onions,garlic,fresno chilis,lime juice, lime zest.

2.  Add salt,pepper,chipotle powder,paprika,dill,parsley.Now  stir chipotle mixture until  combined.

1.Pour chipotle mixture over potatoes and stir until  potatoes are completely coated.Now you can put this lovely condiment and plate it serve it cold or a little warm.You’ll soon be able to samba across the kitchen table .I hope you enjoy.
