Hoppy Easter Cupcakes!

 

 

 

 

 

 

 

 

 

I had fun making these cupcakes. I didn’t have a plan, I just went with the flow. I had lots of ideas, but these are the finished results. They were very easy to make and even easier to eat. I thought they were cute. This a great project for kids and parents to do together, especially around Easter, when all the lovely pastel colors just reminds me of the beautiful flowers all around. I was inspired by some Easter Basket cupcake I saw online. I made the cupcake batter and frosting from scratch and had store bought malted eggs and bunnies. These cupcakes are tasty and delicious; I hope you enjoy making them!

Ingredients:

1-1/2 cups cake flour

1 cup sugar

1 tsp baking powder

1/2 tsp salt

1/4 cup butter

2 large eggs

1 tsp vanilla extract

1 cup buttermilk

4 or 5 waffle ice cream bowls

Directions:

Preheat oven to 350 degrees. Take  aluminum foil and wrap around the top edge of the waffle bowl carefully and set aside. In a large bowl, cream the butter, sugar, and vanilla until light and fluffy. Add eggs and beat until combined.

In a small bowl, combine the flour, baking powder, and salt.

Gradually add 1/4 cup flour mixture into butter mixture; beat until combined, but don’t over beat. Now add in 1/3 cup of the buttermilk and beat. Repeat with the flour and buttermilk 2 more times until everything is combined. Now stir in the sprinkles.

Now with a medium ice cream scoop , put 2 scoops of batter into each waffle bowl. Bake for 20-25 mins until done, or when a toothpick comes out clean. Transfer to a wire rack to cool for 35 mins. Just to let you know, the waffle bowls may spread out – that’s the reason to wrap foil around the top.

It’s Frosting Time:

1/4 cup butter

1/4 cup Crisco shortening

1 cup powdered sugar

2 tsps vanilla extract

3-4 tbsps milk or cream

Directions:

Cream together the butter and shortening, then add vanilla extract. Add in powdered sugar and beat until combined. Add in cream and mix until blended. Now add 2-3 drops of green liquid or gel food coloring and blend.

Easter Cupcake Stuff

Putting the basket together!!!

Take an offset spatula and start frosting the cupcakes. After all the cupcake are frosted, add the grass. Now you have added all of the grass, insert the Twizzlers. Now add the bunnies, candy eggs, and sprinkles and decorate them any you way you want. Be creative and have fun!
